Happy New Year!

Wishing each and everyone a Blessed Prosperous Happy 2010! 13 Fruits - A Chinese tradition followed by Filipinos during New Year. Fruits has to be round and sweet. 13 fruits according to the tradition will bring luck and prosperity.

My 13 fruits are grapes, apples, oranges, kiwi, mango, cantaloupe, honeydew, watermelon, Asian pears, peaches, grapefruit, nectarines and lastly pineapple which is according to Feng Shui is the lucky fruit for year 2010.

Pineapple Ham

7 to 10 lbs Ham
4 cups pineapple juice
1 teaspoon salt
1 small can crushed pineapple
3 tablespoon brown sugar
6 pieces whole cloves
baking dish
aluminum foil
Cooking Procedure:
1. Boil ham using 4 cups of pineapple juice mixed with a teaspoon of salt and 6 pieces whole cloves in high heat. When it starts boiling reduce heat to medium low and simmer for 2 hours while flipping the ham every 30 minutes.
2. Heat oven in 375 degree.
3. Use a small can of pineapple crushed mixed with brown sugar.
4. Coat ham with the crushed pineapple and sugar mixture.
5. Bake for 30 minutes.
6. Remove ham from oven and cover with aluminum foil.
7. Return ham to the oven and continue baking for another hour.
8. Allow ham to cool for at least 20 minutes before serving.

Seafood Paella

A mixture of Filipino and Spanish Seafood Paella recipe. Ingredients:
1 yellow onion
2 medium tomatoes
1 lb chicken
1 lb pork loin
1/2 lb squid
2 cups pearl rice
2 cups sticky rice
5 cups chicken broth
1 large pinch Saffron
1 teaspoon turmeric powder
1 lb raw mussels in shell
1 lb small clams
1 lb shrimp, medium - shell on
1 red pepper
1 10 oz. pkg frozen peas
Olive Oil
Salt to taste
4 pcs egg, hard boiled and cut into 4
Cooking Direction:
Cut chicken and pork into serving sizes.
Clean the squid and cut into rings.
Slice red pepper and chop onions and tomatoes, set aside.
Heat pan, saute the onions and tomatoes in the olive oil.
Add more olive oil as needed to prevent sticking.
Once the onions are translucent, add the chicken and cook, stirring constantly.
Add pork and squid and cook, stirring often.
Add rice and stir for 2-3 minutes to thoroughly coat the rice with oil and mix with the other ingredients.
Add saffron to the chicken broth and stir.
Pour broth into pan until pan contents are covered.
Spread ingredients evenly over bottom of pan.
Arrange mussels around outside edge of pan.
Place clams and shrimp distributing them around pan.
Add slices of pepper on top.
Allow to simmer, cooking rice. Add more broth if necessary.
When rice is almost cooked, sprinkle peas over the pan.
When rice is cooked, remove from heat and cover with aluminum foil.
Garnish with sliced egg and serve.

Pata Tim

1 whole pork hock
1/2 cup vinegar
1/2 cup sugar
1 cup rice vinegar
1/2 cup soy sauce
2 tablespoon hoisin sauce
2 star anise
3 bay leaves
6 cloves of garlic, minced
thumb-sized ginger, sliced thin

To garnish:
1 carrot, sliced thin and blanced
6 pieces shitake mushroom, soaked
1 tbsp. sesame seed oil
Cooking Procedure:
Boil pata for an hour. Allow to cool. Remove meat from the bone. Discard bone.
Fry pata in cooking oil till golden brown. Allow to cool.
Start making the braising sauce.
Pour the vinegar in a large pot enough to hold the pork hock. Add the sugar. Boil until the sugar melts.
Lower the heat and simmer until the mixture starts to turn syrupy.
Add the soy sauce and rice vinegar.
Lower the pork into the sauce.
Add bay leaves, star anise, mushroom, garlic and ginger.
Simmer for 2 to 2-1/2 hours, turning the pork hock over every 30 minutes.
Check the liquid after an hour. Add more salt and water if necessary.
When the pork is done, transfer to a serving bowl.
Arrange the blanched carrots around it.
Strain sauce and pour over pork.
Heat sesame seed oil until smoking and drizzle over the pork.
Serve hot.

Chicken Cordon Bleu Rolls

ala Overseas Pinoy CookingIngredients:
4 large skinless boneless chicken breasts
15 pcs. sliced sweet ham, slice into 4 strips
1 block quick melt cheese, sliced into 1/4″ strips
white pepper powder
lumpia, spring roll wrappers, about 40 pcs.
1/2 cup flour
2 cups bread crumbs
cooking oil
2 1/2 tbsp butter
2 tbsp cornstarch
1 1/2 cup milk
Cooking Procedure:

Preparing the chicken:
Slice chicken breast into thin slices.Place chicken slice in between waxed kitchen paper and using a kitchen mullet pound the chicken slices to make it thinner.Cut the chicken slices to about 2” X 4”sheets, keep aside.

To Assemble:
In a large plate place one piece of lumpia wrapper.Place on top 1 sheet of chicken followed by ham then the cheese strips.Roll lumpia wrapper halfway, fold both ends, now fully roll and wet the end of flap with water to seal.Repeat process with the rest and keep aside.

Wrapping batter:
Dilute the flour with water just enough to form a sauce like batter.
Frying:Heat generous amount of oil in a wok.Now dip each roll in the wrapping batter then roll in the bowl of breadcrumbs until evenly coated.Deep fry at medium to low heat for 2-3 minutes or until it turns to golden brown.

Dipping sauce:
To make the roux heat butter in a pan until it start to smoke, stir in the cornstarch until it forms into a lump.In a separate sauce pan heat the milk until it start to boil.Add in the roux and simmer for 1 to 2 minutes stirring occasionally until sauce thickens.Season with salt and white pepper to taste.

I followed the cooking direction step by step and is was pretty easy to make. I prepared the roll the night before to save me some time. Really great for parties. I also had the dipping sauce served on the side. Turned out a hit and my Mom asked for the recipe so that just tells me it was really good.

Maligayang Pasko!

Christmas is all about Jesus, family, friends, gifts and food so I am wishing you all a Blessed Merry Christmas!
Today we celebrated this special day with the family. It was a day full of love, gifts and food.
Sharing my Christmas spread, (top) Pata Tim, Chicken Cordon Bleu, Seafood Paella and Pineapple Ham.We had dinner over my sisters house so more food. She made her famous Cream Corn, Scallop Potatoes, Turkey and Ham.

Ginisang Ampalaya

3 pcs medium size ampalaya, sliced
3 pcs garlic cloves, minced
1 medium onion, sliced thin
1 large tomato, sliced thin
2 pcs egg, beaten
1 cup water
salt and pepper to taste
Cooking Direction:
Saute garlic, onion and tomato. Add water and bring to boil. Season with salt and pepper. Add the ampalaya slices and simmer for 10 minutes. Make sure not to stir once you add the ampalaya to avoid the ampalaya from being bitter. Add egg and simmer for another minute. Remove from heat and serve.

Soy Sauce Pork

2 lb pork belly with ribs, sliced
3/4 cup soy sauce
1 cup water
1/2 cup vinegar
2 tablespoon hoisin sauce
1 tablespoon brown sugar
1/2 teaspoon peppercorn
salt to taste
Cooking Direction:
Boil meat in water till half way cooked. Add the remaining ingredients and simmer till sauce thickens. Remove from heat and serve with a side of steam rice.

Chicken Empanada

For Filling
1 tablespoon olive oil
1 small onion, minced
4 cloves garlic, minced
1 lb chicken breast , deboned and cubed
1 small potato, diced
1 small carrot, diced
1 cup chicken broth
1/2 cup raisins
1 teaspoons salt
1/4 teaspoon pepper
While doing my X-mas shopping I saw this great gadget, molder for empanada. The package comes in 4 pieces and with 3 sizes for $3.99. Great buy. The one I used is the biggest size.Now I have no excuse not to make empanada.
I also used pre-made dough from the supermarket, frozen puff pastry dough. It did not look so perfect but the taste and the dough turned
out pretty good for a first time. For sure this won't be the last time I am making this. Cooking Direction:
Heat oven to 375f.
Saute garlic and onion till golden brown. Add chicken, veggies, chicken broth and simmer for 10 minutes. Add raisins and season with salt and pepper. Simmer for another 5 minutes. Remove from heat and allow to cool . Place a spoon full in the dough.
Sprinkle some flour in the baking pan before arranging the empanada. Bake for 30 to 45 minutes. In between brush the empanada
with egg yolk.
Remove from heat and enjoy with an ice glass of coke.

Lechon Paksiw

Lechon sa Oven (Roast Pork)
For roast pork you need:
7 lbs. pork leg
sea salt
garlic powder
Set oven to 400f.
Sprinkle pork with good amount of salt, garlic powder and groundpepper.
Bake pork covered with aluminum foil for an hour.
(That will prevent pork skin from burning)
After an hour remove aluminum foil. Brush meat drippings on the skin.
Continue baking in 400f for another 2 to 3 hours.
How to make Paksiw Letchon:
Slice roast pork into bite size.
Cook meat in:
1 cup vinegar
6 pcs. garlic cloves (minced)
1 teaspoon whole peppercorn
6 pcs. bay leaves
1/2 cup brown sugar and salt to taste.
Simmer for 30 minutes. Add 1/2 cup Mang Thomas lechon sauce. Simmer for 5 more minutes. Remove from heat and serve over steam.

Pork Inasal

2 lbs pork butt
1/2 pinoy vinegar
1/4 cup soy sauce
1 tablespoon chopped ginger
6 pieces garlic clove, chopped
3 tablespoons brown sugar
5 tablespoons calamansi juice
1 tablespoon salt
bbq stick

Cooking Direction:
Using a mixing bowl mix all ingredients. Cut pork into thin slices. Using the mixture marinate the pork for at least 4 hours.
*Soak bbq stick overnight to avoid burning.*

For Basting: (achuete oil)
Dilute 1 teaspoon achuete powder on 1/2 cup of cooking oil. Stir constantly until the oil turns orange.

Grill pork, turning it over every 5 minutes while basting constantly with achuete oil.
Serve hot with a side of achara (papaya pickles) and steam

We had this funnel cake last Saturday from Knott's Berry Farm. It was so good. So rich and so tasty.

Funnel cakes are made by pouring batter through a funnel into hot oil in a circular pattern and deep frying it until golden-brown. Ginataang Munggo sa Daing

Mung beans cooked in coconut milk and dried fish
Simple recipe yet fulfilling. The best during rainy season.

Cooking direction:
Boil 1 lb mung beans till almost cooked.
Add 2 pieces dried fish, small sliced onion and a tablespoon of fish sauce.
Continue boiling till beans are fully cooked.
Add 1 can coconut milk and simmer.
Few minutes after add 1/2 cup malunggay leaves.
Simmer for 2 minutes and remove from heat.
Serve over steam rice.

Bangus in Black Beans

Boneless bangus cooked in black beans, green papaya, sweet potato leaves, onion and tamarind powder.

The best after all those turkey and ham dinner.

Roasted Turkey

This this easy yet full of flavor roasted turkey.

All you need is 13 lbs. turkey marinated in fish sauce, garlic powder, black pepper and stuffed with lemon grass for an hour then oven roasted for 4 hours in 375f.

This turkey turned out really delicious and juicy. It was a hit.

Sweet Potato Fritters

aka Kamote Q
Deep fried sweet potatoes sprinkled with brown sugar till sugar melts and sticks to the sweet potato then sprinkled with sesame seeds.

Egg Pie Recipe

Ingredients:2 ready bake Marie Calendar deep-dish pie shells
10 large eggs, (5 whole eggs & 5 egg yolks)
1/2 cup sugar
1 can evaporated milk
1 can condensed milk
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 sticks butter, softened

How to make Egg Pie;In large bowl, cream butter, eggs and sugar and mix until well blended, add evaporated milk and the condensed milk.
Add vanilla and lemon extract and mix for few minutes.
Pour half of the mixture into 1 pie shell and the remaining mixture in the second pie shell.
Bake in oven at between 350 and 375 degrees for 30 to 35 minutes, until golden brown.

Pumpkin Cheese Cake

3 (8-ounce) packages cream cheese, at room temperature
1 (15-ounce) can pureed pumpkin
3 eggs plus 1 egg yolk
1/4 cup sour cream
1 1/2 cups sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg
1/8 teaspoon ground cloves
2 tablespoon all-purpose flour
1 teaspoon vanilla extract

Directions Preheat oven to 350 degrees F.For filling:Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.
Pour into crust. Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.
For crust:*I used ready made graham cracker ready made crust.*

Baked Bangus

1 Boneless Bangus (milk fish)
thumb size ginger, sliced thin
1 small onion, chopped
1 large tomato, chopped
salt and ground pepper to taste
banana leaves
aluminum wrap
Cooking Direction:
Mix ginger, onion, tomato, salt and pepper on a bowl. Fill bangus with the mixture and wrap using banana leaves then the aluminum foil. Bake for an hour and serve. You have the option to bake or to grilled.

Ampalaya in Corn Beef

If you like ampalaya then this recipe is a must try. Simple yet fullfilling and quick fix.
Saute minced garlic, thin sliced onion and corn beef. After 5 minutes add 1/2 cup of water. Simmer. Add slicing of ampalaya (bitter melon) and simmer for 5 to 10 minutes. Remove from heat and serve over steam rice
