2 lbs. red baby potatoes, boiled (aldente) separate and cut in four
1 med. onions, cut cubes
1 small red bellpeppers, cut thin
a pinch of dried basil
1 tablespoon olive oil
salt and pepper to taste
In a pan saute bellpepper and onions using olive oil. After few minutes add the boiled potatoes. Stir and cook for 3-5 minutes. Season with the italian seasoning, dried basil and salt and pepper to taste. Ready to serve.
Best as a side dish for baked/broiled steak or baked chicken.
