Tokwa at Baboy

Great for any gatherings and the best for pulutan.





Ingredients:
  • 1 pack fresh hard tofu, drain
  • 2 lbs pork belly
  • 3 pieces green onion, sliced thin
  • 1 thumb size ginger, minced
  • 1/2 cup vinegar
  • 1 teaspoon sugar
  • 6 tablespoon soy sauce
  • 2 pieces jalapeno pepper, sliced thin
  • salt and ground pepper to taste
  • one cup of cooking oil





Cooking Direction:
  1. Using a wok place pork belly and pour enough water to cover the pork. 
  2. Add garlic, whole peppercorn and rock salt. 
  3. Cover and let it boil for about an hour or till the pork is fully cooked. 
  4. Set aside pork and allow to completely cool. 
  5. Cut into cubes then set it aside.
  6. Using a pan fry tofu in cooking oil till golden brown on both side. 
  7. Let them cool and dry using a paper towel. 
  8. Cut them into cubes same size as the pork. Set aside.
  9. In a bowl mix the vinegar, soy sauce, chopped ginger, sliced green onions, sliced jalapeno and chopped onions together. 
  10. Add sugar, salt and pepper to taste.
  11. Using a deep dish mix cut pork, fried tofu and the vinegar mixture.
  12. Toss, serve and enjoy.
