1 - 14 oz Chick Peas in Brine can, draine liquid
5 cloves of Garlic, peeled & roasted
3 medium size Chinese Eggplant, roasted & peeled
1 small Lemon, juiced
2 tablespoon Olive Oil
salt to taste
2 tablespoon lemon juice
Using a mixing bowl mix lemon juice, olive oil, salt and ground pepper. Toss the cucumbers and tomatoes. Refrigerate for 30 minutes and serve.
