Salmon Stew Recipe

Also known as Sinabawan nga Isda nga Salmon in Ilonggo.
A simple yet healthy recipe rich in vitamins using fresh bought salmon and fresh vegetables.
2 lbs Pink Salmon (or milk fish)
a bunch of fresh sweet potato leaves (2 cups)
6 pieces cherry tomato (whole)
1 small onion (sliced thin)
3 pieces sweet long pepper (katumbal laba)
salt and black ground pepper to taste
3 cups water
Cooking Direction:
Using a deep pot bring water, tomatoes, sweet pepper and onion to boil for 5 minutes in medium heat. Season with salt and ground pepper to taste. Add slices of Salmon and continue simmering on medium low heat for 5 minutes. Now add the sweet potato leaves. Cover the pot and simmer for few minutes. Remove from heat and serve.
(Tip: Make sure to remove the cover of the pot if you are not serving the dish right away to avoid the greens from getting over cooked.)
Check out this fresh vegetables I purchased from our swap meat in Lincoln, Anaheim every Thursday of the week. Really great for soup when fresh. The taste is totally different. Sweeter compare to most of the vegetables we buy from the local market.
