Beef Igado

Igado is an Ilocano dish but this one is my version. It's almost the same as Beef Menudo with no tomato sauce but with liver spread out of a can.
2 lbs lean beef, slice thin bite size
1 small potato, diced bite size
1 medium size red bell pepper, julienne
1/2 cup snow peas
2 tablespoon liver spread (can)
2 tablespoon soy sauce
3-4 pieces garlic cloves, minced
1 medium size onion, sliced thin
2 tablespoon cooking oil
salt and ground black pepper to taste
2 pieces dried bay leaves
Cooking Direction:
Saute garlic and onions till caramelized.
Add beef and saute till beef turns golden brown.
Add soy sauce, bay leaves and water then simmer till beef is tender.
Add potatoes and bell pepper. Season with salt and ground pepper and simmer for 4-5 minutes.
Add liver spread and snow peas. Simmer for few more minutes.
Remove from heat and serve. Enjoy!

They serve healthy entrees freshly prepared to order. When they say they served at "on the go" speed, for sure they do. Took only few minutes for our order. What I like is the option to have brown rice without extra fee.

Milkfish in Soy Sauce

Also known as Pinatisan na Bangus or Bangrus in Ilonggo
1 large boneless Milk fish, cut in 6 pieces
2 tablespoon flour
1/3 cup cooking oil
1/2 cup soy sauce
1/2 cup vinegar
2 tablespoon sugar
1 teaspoon Hoisin sauce (optional)
5 pcs garlic cloves, minced
1 small onion, cut thin
1 teaspoon minced ginger
Cooking Direction:
In a mixing bowl combine soy sauce, vinegar, sugar, hoisin sauce, garlic and minced ginger. Taste test for desired salty sweetness taste. You can always add more or lesser sugar depends on your taste.
Marinate milk fish in soy sauce mixture for 5 minutes. Remove fish from the marinate, dip in flour and fry in cooking oil in medium low heat. Set aside fried fish.
Strain remaining juice marinate to separate the garlic and ginger pieces from the juice.
Using a clean wok brown garlic and ginger till golden brown. Add remaining juice marinate to the wok. Simmer in low heat for few minutes. Add fried fish. Simmer for few more minutes. Remove from heat, top with slices of onions and serve.

The famous Valerio's Bakery is now open in Anaheim location. Valerio's took over O'Manila Bakery. Same shopping center as Jollibee (the #1 fast food chain in the Philippines) , Red Ribbon (specializes in Filipino cakes and pastries) , LBC (Filipino money remittance and cargo services), Manila Arts & Trade (Filipino dry goods) , Kapit Bahay (Filipino restaurant) and soon to open Chowking (Filipino/Chinese restaurant).
Walls and tables filled with mamon, hopia, ensaymada, pandesal, pan de coco, haba haba and lots more to choose from.
My favorite of all is the hot pandesal. I usually call first to check if they have fresh baked hot pandesal before driving to the bakery. I could finish 2-3 hot pandesal while driving home.

A lot of desserts too from puto to palitaw to puto bungbong and lots and lots more.

Pan Seared Salmon with Asparagus

A Healthy Family Meal

Simple Cooking Direction:Season Pink Salmon Steaks with sea salt and ground black pepper. Preheat a cast iron pan in medium high heat. Brush salmon with olive oil. Cook salmon for 3 minutes on each side. Remove from heat. Seat aside.
Using a different pan saute diced onion, red bell pepper and asparagus in olive oil in medium high heat. Saute for 2 minutes, cover pan and remove pan from heat.
Serve sauteed vegetables as a side dish and enjoy.

Filipino Picadillo Recipe

One of my favorite quick recipe
1 lb ground lean beef
1/2 cup cubed potato
1/2 cup cubed carrot
1/2 cup cubed red bell pepper
3 pieces garlic, minced
1 small onion, minced
1/2 cup raisins
1 cup tomato sauce
1/2 cup pineapple juice
1 tablespoon sugar
salt and ground pepper to taste
1 tablespoon cooking oil
Cooking Direction:
Saute garlic and onions in cooking oil till caramelized.
Add ground beef and saute till golden brown.
Add raisins, carrots, potatoes and bell peppers, saute till vegetables turns half way cooked.
Pour in pineapple juice and tomato sauce. Cover and simmer in low heat for 3-4 minutes.
Season with sugar, salt and ground pepper to taste.
Simmer for few minutes, remove from heat and serve.

Chicken and Broccoli Recipe

A Healthy Version

2 lbs broccoli flower, cut into bite size
1 lb chicken breast, cut into strips
4 pieces garlic cloves, minced
1 thumb size ginger, minced
1 small onion, cut into small cubes
1 tablespoon hoisin sauce
2 tablespoon oyster sauce
2 tablespoon soy sauce
1/2 cup water
1 tablespoon cornstarch
2 tablespoon olive oil
1 tablespoon sugar
1 teaspoon sesame oil
Cooking Direction:
Mix water, soy sauce, hoisin sauce, oyster sauce, sugar, sesame oil, corn starch and stir making sure all cornstarch are diluted. Set aside.

Using a wok saute ginger, garlic and chicken breast strips in olive oil in medium low heat till golden brown. Add onion,broccoli and stir fry for 2-3 minutes. Pour sauces mixture into the wok. Stir and simmer for 3-4 minutes.

Remove from heat, serve and enjoy.

Karne Prita Recipe

Also known as Bistek
2 lbs. lean beef, sliced thin
1/2 cup soy sauce
1/3 cup water
1/4 cup kalamansi juice or lemon juice
1 tablespoon garlic, crushed
2 tablespoon sugar
salt and ground pepper to taste
1 medium onion, slice thin
1 medium size potato, slice thin
1/3 cup canola oil
Mix water, soy sauce, lemon juice, garlic, sugar, salt and pepper. Add beef. Marinade for 20-30 minutes in the fridge. Remove beef from the marinade and drain remaining juice. Make sure to set aside the remaining marinade.
Heat pan and add cooking oil. Fry potatoes and onions till golden brown and set aside. Using the same cooking oil fry beef till golden brown and set aside. Using the same pan pour remaining marinade and simmer for few minutes. Once the sauce starts to thicken add the browned beef to the pan and continue to simmer for few more minutes. Top with fried potatoes and onions. Remove from heat and serve.
