1 large boneless Milk fish, cut in 6 pieces
1/2 cup soy sauce
1/2 cup vinegar
1 teaspoon Hoisin sauce (optional)
5 pcs garlic cloves, minced
1 small onion, cut thin
1 teaspoon minced ginger
In a mixing bowl combine soy sauce, vinegar, sugar, hoisin sauce, garlic and minced ginger. Taste test for desired salty sweetness taste. You can always add more or lesser sugar depends on your taste.
Marinate milk fish in soy sauce mixture for 5 minutes. Remove fish from the marinate, dip in flour and fry in cooking oil in medium low heat. Set aside fried fish.
Strain remaining juice marinate to separate the garlic and ginger pieces from the juice.
Using a clean wok brown garlic and ginger till golden brown. Add remaining juice marinate to the wok. Simmer in low heat for few minutes. Add fried fish. Simmer for few more minutes. Remove from heat, top with slices of onions and serve.
