How to make Gising Gising. Gising-Gising or Gising Gising is a spicy Filipino dish originating from the provinces of Nueva Ecija and Pampanga. It is traditionally made with chopped beans, and cooked in coconut milk with ground pork, chili peppers and shrimp paste. Gising-Gising is a quick and easy Filipino dish. It is a delicious vegetable dish packed with lots of flavor. Easy to make and light in flavor. 


Winged beans or sigarilyas is also used when making Gising Gising and same with sitaw or long beans and kangkong. Shrimp paste or bagoong alamang is used to enhance the flavor and chili peppers to make it spicier so feel free to adjust the chili to your taste. You can also use chopped pork or even ground chicken if ground pork is not available. Ginger is also optional when cooking Gising Gising but from my experience, ginger do makes a difference and made this dish more flavorful.

INGREDIENTS
  • 2 tsp canola oil
  • 1 medium onion, chopped
  • 4 cloves garlic, chopped
  • 1 thumb size ginger, grated or minced
  • 2 tbsp alamang bagoong, rinsed and drained well
  • 1 lb lean ground pork
  • 1 cup coconut milk
  • 1/4 tsp salt or to taste
  • 1/4 tsp ground pepper or to taste
  • 1 lb green beans, cut into 1/2 inch thick
  • 4-5 chili peppers or to taste
  • 1 cup coconut cream



INSTRUCTIONS
  1. Using a wide pan or a wok, heat over medium heat and add oil. Saute onion, garlic and ginger until aromatic for about a minute. Add bagoong alamang and saute for 2 minutes or until fragrant while stirring constantly. 
  2. Add ground pork and cook until medium brown for about 5 minutes or until pork starts to render fat while stirring occasionally. Gently add coconut milk and stir to combine. Simmer over medium-low heat until pork is tender and sauce is reduced for about 10-15 minutes. 
  3. Season with salt and ground pepper. Stir to combine. Add green beans and cook until halfway done or until tender-crisp for about 2 minutes. Add chili peppers and coconut cream. Simmer for 3 minutes or until beans are done. Season with more salt and pepper as needed. Serve while hot with rice. Enjoy!
