Instant favorite of my family
1/2 lb pork belly, cut into small slices
1 can coconut milk
1 cup datu puti vinegar
1 tablespoon shrimp paste (bagoong)
2 lbs young kangkong stem, cut into 2 inches
1 small onion, cut thin
1 teaspoon minced garlic
salt and ground pepper to taste
Saute garlic, onion, bagoong and pork till pork turns golden brown.
Add the kangkong stems and vinegar.
Simmer for 10 to 15 minutes.
Season with salt and ground pepper.
Add coconut milk and simmer for few more minutes.
Remove from heat and serve over steam rice.
