1 whole chicken, cut into pieces
1 large potato, cubed
1 large carrot, cubed
1 medium red bell pepper, cubed
1 medium yellow or green bell pepper, cubed
1 medium onion, sliced thin
6 cloves garlic, minced
1 medium can tomato sauce
4 pieces bay leaves
2 tablespoon fish sauce
sugar, salt and ground pepper to taste
1 cup pineapple juice
1 cup water
2 tablespoon cooking oil
Saute garlic, onion and chicken till chicken turns golden brown.
Add fish sauce and bay leaves.
After 5 minutes pour pineapple juice and water.
Simmer for 10 minutes then add the tomato sauce.
Start adding vegetables starting with carrots, potatoes and bell peppers.
Season with sugar, salt and ground pepper.
Allow chicken and vegetables to cook.
Serve over steam rice.
