Hummus Baba Ghannouj and Salade Recipes

Hummus and Baba Ghannouj are my favorite Middle Eastern dip. Hummus is mainly made of Chick Peas and Baba Ghanouj is with eggplant. Instead of making 2 dip I made it into one. A lot lighter taste with a whole lot of flavor. Check out my cooking version below.

For Hummus Baba Ghanouj Dip you will need:

1 - 14 oz Chick Peas in Brine can, drain liquid

5 cloves of Garlic, peeled & roasted

3 medium size Chinese Eggplant, roasted & peeled

1 small Lemon, juiced

2 tablespoon Olive Oil

a dash of Cumin powder

salt to taste

How to make the Hummus Baba Ghanouj:

Place the olive oil, roasted garlic, chickpeas and roasted eggplant in a blender and mix for 2 minutes.

Now add the lemon juice and salt and blend again for another minute.

All done. Pour in a platter, sprinkle a dash of cumin powder and serve with fresh pita bread and salade (tomato and cucumber salad).

For Salade (cucumber and tomato salad) you will need:

3 pieces of Greek Cucumber, cubed

3 pieces of Roma Tomatoes (seeds removed), cubed

2 tablespoon lemon juice

1 tablespoon olive oil

a pinch of salt and fresh ground pepper

How to make the Salade:

Using a mixing bowl mix lemon juice, olive oil, salt and ground pepper.

Toss the cucumbers and tomatoes.

Refrigerate for 30 minutes and serve.
