2 lbs beef with tendon or any kind of beef desired, cut into cubed
1 large red bell pepper, cut into cubed
1 large size potato, quartered
1 large size carrots, quartered
1 large size onion, sliced thin
5 garlic cloves, chopped
1 cup tomato sauce
5 pieces peppercorns, crushed
2 tablespoon soy sauce
1/4 teaspoon crushed chili pepper
3 pieces bay leaf
1 can sweet peas or guisantes
salt and ground pepper to taste
olive oil or canola cooking oil
Heat the cooking oil using a wok or a pan.
Fry potatoes and carrots till it turns a little brown.
Remove fried carrots and potatoes from the pan and set aside.
Using the same wok/pan, saute the garlic then the onions.
Add the beef, crushed peppercorn, bay leaves and the soy sauce. Simmer for 5-10 minutes.
Add 4 cups of water and allow the beef to boil for about 2 hours or till the beef is tender enough while continuously adding water if needed.
Once the beef is fully cooked add the tomato sauce.
Simmer for 10-15 minutes or until the sauce thickens.
Add the bell pepper, fried carrots, potatoes and sweet peas.
Simmer for 5 to 10 minutes.
Season with crushed chili pepper, salt and ground pepper to taste and serve.
