Beef Kaldereta

  • 2 lbs beef with tendon or any kind of beef desired, cut into cubed
  • 1 large red bell pepper, cut into cubed
  • 1 large size potato, quartered
  • 1 large size carrots, quartered
  • 1 large size onion, sliced thin
  • 5 garlic cloves, chopped
  • 1 cup tomato sauce
  • 5 pieces peppercorns, crushed
  • 2 tablespoon soy sauce
  • 1/4 teaspoon crushed chili pepper
  • 3 pieces bay leaf
  • 1 can sweet peas or guisantes
  • salt and ground pepper to taste
  • olive oil or canola cooking oil


  1. Heat the cooking oil using a wok or a pan. 
  2. Fry potatoes and carrots till it turns a little brown. 
  3. Remove fried carrots and potatoes from the pan and set aside.
  4. Using the same wok/pan, saute the garlic then the onions. 
  5. Add the beef, crushed peppercorn, bay leaves and the soy sauce. Simmer for 5-10 minutes.
  6. Add 4 cups of water and allow the beef to boil for about 2 hours or till the beef is tender enough while continuously adding water if needed.
  7. Once the beef is fully cooked add the tomato sauce. 
  8. Simmer for 10-15 minutes or until the sauce thickens. 
  9. Add the bell pepper, fried carrots, potatoes and sweet peas. 
  10. Simmer for 5 to 10 minutes. 
  11. Season with crushed chili pepper, salt and ground pepper to taste and serve.
