A mouth watering chicken recipe cooked twice for extra flavor
3 lbs chicken wings
1/2 cup vinegar
1/4 cup soy sauce
1 tablespoon crushed garlic
2 tablespoon white sugar (optional)
a dash of ground black pepper to taste
4 pieces bay leaves
1/2 cup cooking oil for frying
1/4 teaspoon annatto powder, dissolved in 1 tablespoon cooking oil
Marinate chicken wings and chill for at least 30 minutes.
Remove chicken from the marinade.
Set the marinade aside for later use.
Heat cooking oil in a wok in medium heat and fry the marinated chicken wings till golden brown.
Once all chicken wings are fried, remove excess oil from the wok and discard.
Pour the remaining marinade over the fried chicken in the wok and simmer in medium low heat for 10-15 minutes.
Once the sauce starts to thicken pour the annatto powder dissolved in cooking oil.
Simmer for few more minutes.
Remove from heat and serve.
