Pork Chop

1 lb pork belly, cut thin (or pork chop)
3 garlic cloves, minced
1 tablespoon soy sauce
pinch of ground pepper
1 egg, beaten
1/2 cup all purpose flour
2 tablespoon cornstarch
cooking oil

Cooking Direction:
Marinate pork with garlic, soy sauce and ground pepper for 30 minutes.
Heat wok and place cooking oil in medium heat.
Mix flour and cornstarch. Dip marinated pork in egg and flour/starch mixture and fry.
Serve with tomato or banana ketchup or spiced vinegar.

Arroz Valenciana

4 cups Sticky rice
1 lb chicken breast, cut cubes
4 pieces longanisa, cooked and julienne
2 pieces potato, cut cubes
1 large red bell pepper, julienne
1 can snow peas
2 tablespoon raisins
1 large onion, sliced thin
1 tablespoon crushed garlic
3 pieces eggs, cut into 4
soy sauce, salt and ground pepper to taste
2 tablespoon turmeric
2 stem green onion, sliced thin
Cooking Direction:
1. Cook sticky rice (like you are cooking regular rice with a little less water) with turmeric powder.
2. Boil egg, slice and set aside.
3. Saute crushed garlic, onion, chicken, langonisa, potato, red bell pepper, snow peas and raisins. Season with soy sauce, salt and pepper.
4. Add cooked sticky rice with the sauteed ingredients. Mix.
5. Garnish with egg and green onions and serve.

**You could also add pork and chicken liver in addition to the chicken."

Roasted Chicken

Whole chicken stuffed with lemon grass and seasoned with salt, garlic powder and ground pepper broiled using turbo broiler for 2 hours. Yummy!

Adobong Kangkong sa Gata

Instant favorite of my family.
1/2 lb pork belly, cut into small slices
1 can coconut milk
1 cup datu puti vinegar
1 tablespoon shrimp paste (bagoong)
2 lbs young kangkong stem, cut into 2 inches
1 small onion, cut thin
1 teaspoon minced garlic
salt and ground pepper to taste
Cooking Direction:
Saute garlic, onion, bagoong and pork till pork turns golden brown. Add the kangkong stems and vinegar. Simmer for 10 to 15 minutes. Season with salt and ground pepper. Add coconut milk and simmer for few more minutes. Remove from heat and serve over steam rice.

A Trip to Albertsons

You know how kids feel when they are inside a toy store? That's exactly how I feel every time I am in a grocery store. Specially my favorite store, Albertsons and conveniently located a mile from work.

Pumpkins every where and so does the Halloween candies. All sort and sizes of pumpkins and "Jack Pumpkin Spice Ale" beer.Jack's Pumpkin Spice Ale is a seasonal herb and spice ale.

Sinigang na Salmon Belly

Simple yet healthy and good for high cholesterol.
Salmon belly cooked in tomatoes, onion, green onion and sinigang mix. Yummy!

Veggie Penne Pasta

Simple Easy Healthy
Ingredients:1 lb penne pasta, boiled and drained
1 large eggplant, cut into bite size
1/4 lb green beans, cut 1 1/2 inches
1 large red bell pepper, cut thin
1 large onion, cut thin
1 whole garlic, minced
3 tablespoon olive oil
salt and ground pepper to taste
Cooking Direction:Boil pasta for 15 to 20 minutes and drain. Set aside.
Saute garlic, onions, green beans, eggplant, bell pepper using olive oil. Season with salt and pepper. Add pasta and mix thoroughly.

Tinolang Game Hen

2 whole game hen, cut into pieces
1 large green papaya, sliced in serving size
1 pack (frozen) pepper leaves, defrosted
2 pieces thumb size ginger, sliced thin
1 large onion, sliced thin
1 stem lemon grass, cut in 3'inches
2 tablespoon fish sauce
salt and ground pepper to taste

Cooking Direction:
Using a deep pot saute ginger and onion. Add slices of chicken till golden brown. Add slices of lemongrass and season with fish sauce. Add 5 cups of water (or more) and simmer. Add papaya, salt and ground pepper. Few minutes after add defrosted pepper leaves. Remove from heat and serve hot.

Grilled Liempo

Pork belly marinated with knorr sinigang mix and grilled using cast iron pan.
Marinade 2 lbs pork belly (liempo) using a pouch of sinigang mix for at least 30 minutes. Best when grilled or fried.

Banana Turon

Sweet and Crispy Banana TuronIngredients:1 pack Lumpia Wrapper (30 pieces)
15 pieces ripe cooking banana, sliced lengthwise thick
2 cups brown sugar
1 cup cooking oil
2 teaspoon cornstarch, diluted in 1/2 cup water and microwave for a minute

Place a banana on the middle of the wrapper. Cover the banana with a teaspoon of sugar. Fold the portion of the wrapper nearest you over the banana until just covered. Turn the wrapper again to enclose the banana securely. Moisten the left and right hand edges of the wrapper with cornstarch egg. Fold over the corners and press down firmly to seal, making an envelope. Moisten the flap of the envelope with cornstarch and turn, rolling firmly into a cylinder. Seal firmly. Set aside, seam side down. Repeat with remaining slices.
Heat oil in a wok to 375 degrees. Place 1/2 cup of brown sugar first then 4 or 5 turon at a time in the hot oil. Fry until crisp and golden. Remove and drain on paper towels. Serve hot.

Beans and Pork

3 lbs pork hock
1 small bag red beans
1 bag frozen kamote leaves (sweet potato), defrost
1 pouch sinigang mix
1 medium onion, sliced thin
salt and ground pepper to taste

Cooking Direction:
Using a big pot cover red beans and pork hock with enough water and bring to boil. Continue boiling allowing the pork and beans to cook. Add slices of onion and ground pepper. Once the pork and beans turns soft season with salt and sinigang mix. Simmer for few minutes. Lastly add the kamote leaves. Remove from heat and serve.
