Bibingka Royal Recipe


Bibingka Royal is a popular rice flour cake made from glutinous rice flour, young coconut strips and milk. Bibingka Royal is a popular Filipino rice cake in the Philippines specially around Christmas time. 


Ingredients:
  • 1 box (16 oz) mochiko (sweet rice flour)
  • 1 bottle macapuno string
  • 6 eggs or egg beater equivalent
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 can evaporated milk
  • 1 bar cheddar cheese, cubed
  • 2 tablespoon melted butter
  • 1/2 cup shredded cheddar cheese
  • banana leaves


Instructions:
  1. Pre-heat oven on 375 degree.
  2. Using a mixing bowl mix evaporated milk, egg, sugar, baking powder, mochiko, macapuno string, cubed cheese.
  3. Line the 10 inch baking pan with heated banana leaves and grease with melted butter.
  4. Pour mixture and bake at 375 degree for 30 minutes. 
  5. Remove pan and sprinkle grated cheese on top. Return pan to the oven for another 30 minutes.

*Allow the bibingka to cool before slicing*

  2. Lee I was going to buy leche plan molder pero $6.99 each sa pinoy store so na back out ako hahaha instead I used a cake pan.

  3. what if we cant find mochiko powder?we only have glutinous rice flour.is it ok?

    Glutinous rice should work. Try it first with a little less water. Mochiko is more thicker compare to glutinous rice. Happy cooking!
