Roasted Turkey

This this easy yet full of flavor roasted turkey.

All you need is 13 lbs. turkey marinated in fish sauce, garlic powder, black pepper and stuffed with lemon grass for an hour then oven roasted for 4 hours in 375f.

This turkey turned out really delicious and juicy. It was a hit.

Sweet Potato Fritters

aka Kamote Q
Deep fried sweet potatoes sprinkled with brown sugar till sugar melts and sticks to the sweet potato then sprinkled with sesame seeds.

Egg Pie Recipe

Ingredients:2 ready bake Marie Calendar deep-dish pie shells
10 large eggs, (5 whole eggs & 5 egg yolks)
1/2 cup sugar
1 can evaporated milk
1 can condensed milk
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 sticks butter, softened

How to make Egg Pie;In large bowl, cream butter, eggs and sugar and mix until well blended, add evaporated milk and the condensed milk.
Add vanilla and lemon extract and mix for few minutes.
Pour half of the mixture into 1 pie shell and the remaining mixture in the second pie shell.
Bake in oven at between 350 and 375 degrees for 30 to 35 minutes, until golden brown.

Pumpkin Cheese Cake

Filling:
3 (8-ounce) packages cream cheese, at room temperature
1 (15-ounce) can pureed pumpkin
3 eggs plus 1 egg yolk
1/4 cup sour cream
1 1/2 cups sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg
1/8 teaspoon ground cloves
2 tablespoon all-purpose flour
1 teaspoon vanilla extract

Directions Preheat oven to 350 degrees F.For filling:Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.
Pour into crust. Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.
For crust:*I used ready made graham cracker ready made crust.*

Baked Bangus

Ingredients:
1 Boneless Bangus (milk fish)
thumb size ginger, sliced thin
1 small onion, chopped
1 large tomato, chopped
salt and ground pepper to taste
banana leaves
aluminum wrap
Cooking Direction:
Mix ginger, onion, tomato, salt and pepper on a bowl. Fill bangus with the mixture and wrap using banana leaves then the aluminum foil. Bake for an hour and serve. You have the option to bake or to grilled.

Ampalaya in Corn Beef


If you like ampalaya then this recipe is a must try. Simple yet fullfilling and quick fix.
Saute minced garlic, thin sliced onion and corn beef. After 5 minutes add 1/2 cup of water. Simmer. Add slicing of ampalaya (bitter melon) and simmer for 5 to 10 minutes. Remove from heat and serve over steam rice

Goldilocks "MAMON"


With all the brand of mamon (sponge cake) I had Goldilocks brand remains my favorite. Super moist and the sweetness is just right.

Banana Cake

My favorite cake.....
Ingredients:5 pieces egg
2 teaspoon vanilla extract
1 cup cooking oil
3 cups banana, mashed
1/2 cup sliced almonds (optional)
1 1/2 cup sugar
1 tablespoon teaspoon salt
3 cups all purpose flour
1 tablespoon baking soda

Cooking Direction:1. Heat oven to 350 degrees.
2. Using a mixing bowl combine flour, sugar, baking soda and salt.
3. On a separate bowl mash banana then add vanilla, eggs, oil and almonds.
4. Combine # 3 to # 2. Make sure everything is mixed well.
5. Grease pan, pour the mixture and bake for 45 minutes to an hour.
I had 2 slices while it's still warm with a glass of coke...yummy!

Chicken Afritada

Ingredients:
1 whole chicken, cut into pieces
1 large potato, cubed
1 large carrot, cubed
1 medium red bell pepper, cubed
1 medium yellow or green bell pepper, cubed
1 medium onion, sliced thin
6 cloves garlic, minced
1 medium can tomato sauce
4 pieces bay leaves
2 tablespoon fish sauce
sugar, salt and ground pepper to taste
1 cup pineapple juice
1 cup water
2 tablespoon cooking oil
Cooking Direction:
Saute garlic, onion and chicken till chicken turns golden brown. Add fish sauce and bay leaves. After 5 minutes pour pineapple juice and water. Simmer for 10 minutes then add the tomato sauce. Start adding vegetables starting with carrots, potatoes and bell peppers. Season with sugar, salt and ground pepper. Allow chicken and vegetables to cook. Serve over steam rice.

Kamote Q

A popular street food in the Philippines, my favorite afternoon snack.
Ingredients:2 lbs sweet potato
3 cups brown sugar
1 tablespoon sesame seed
cooking oil
bamboo skewer

Cooking Procedure:
Peel sweet potato, cut, rinse and pat dry using a paper towel.
Heat oil in medium heat using a wok or a deep frying pan. Deep fry sweet potato for 10 minutes till half way cooked. Sprinkle brown sugar over sweet potato and stir for 5 to 10 minutes. Continue stirring till the sugar melts and sticks to the sweet potato. Sprinkle sesame and keep stirring for another 2 minutes. Remove, string sweet potato and drain excess oil. Serve hot.

Chicken Inasal


Ingredients:2 lbs chicken
1 cup pinoy vinegar
1/2 cup soy sauce
1/3 cup chopped ginger6 pieces garlic clove, chopped
3 tablespoons brown sugar
5 tablespoons calamansi juice
1 tablespoon salt
Cooking Direction:Using a mixing bowl mix all ingredients. Cut slits into the chicken. Using the mixture marinate the chicken overnight.
Make sure all the chicken parts are covered with the marinade.

For Basting
: (achuete oil)
Dilute 1 teaspoon achuete powder on 1/2 cup of cooking oil. Stir constantly until the oil turns orange.Grill chicken, turning it over every 5 minutes while basting constantly with achuete oil.
Serve hot with a side of achara (papaya pickles) and steam rice.
