Paksiw na Galunggong Recipe





Paksiw na Tamudyos or Galunggong sa Iba reminds me of back home, Iloilo City and my Dad. My Dad loves cooking pinaksiw using any fish topped with Iba in Ilonggo or Kamias in Tagalog freshly picked from his garden.









Ingredients:

3 lbs frozen Tamudyos (galunggong), defrost and clean

1 pack frozen kamias (iba)

4-5 pieces garlic cloves, slice thin

1 small onion, slice thin

1 thumb size ginger, slice thin

2 stem green onion, cut into 3 inches

1 cup datu puti vinegar

1/2 cup water

2 tablespoon cooking oil

salt and ground pepper to taste





Cooking Direction:

Using a deep pan arrange slices of ginger.

Top with fish, vinegar, water, garlic, salt and ground pepper and bring to boil for 5 minutes uncovered.

Reduce heat to medium low.

Add kamias, slices of onion and cooking oil. Simmer for 5 minutes.

Add slices of green onion.

Remove from heat and serve. Enjoy with a cup full of rice.
