Alogbati at Karne Recipe

One of my favorite dish growing up in the Philippines.

1 lb ground beef

5 cloves of garlic, minced

1 medium onion, sliced thin

1 piece eggplant, cut into bite size

1 lb squash, cut into bite size

4 cups alogbati, rinsed

salt and pepper to taste

2 tablespoon cooking oil

3 cups water

Cooking Direction:

Saute garlic in cooking oil then the onion till caramelized.

Add ground beef and saute till it turns golden brown.

Add the squash and saute for few minutes.

Now add the water and allow to boil in medium low heat.

Season with salt and pepper to taste.

Add eggplant then the alogbati leaves.

Simmer for few minutes or till all the vegetables are fully cooked.

Remove from heat and serve.
