Pork Liver Afritada Recipe



A popular dish in the Philippines specially on special occasions. It is a tomato-based stew usually cooked with pork meat or chicken but this time I made it with pork liver. Much easier and less time to cook.






 



Ingredients:

1 1/2 lb pork liver, cut into bite size

1 large potato, cut into bite size

1 large carrot, cut into bite size

1 small red bell pepper, julienne

5 cloves of garlic, minced

1 medium size onion, sliced thin

1 cup tomato sauce

1 cup water

2 tablespoon soy sauce

3 tablespoon olive oil or any cooking oil

salt and black ground pepper to taste








Cooking Direction:


Using a wok, saute garlic and onion till caramelized in olive oil in medium high heat. 

Add the slices of carrots first, potatoes and the bell pepper till half way cooked.

Add the slices of pork liver and stir for few minutes till liver is half way cooked. 

Season with soy sauce and ground black pepper. 

Pour in the tomato sauce and the water. Cover and simmer for 5 minutes. 

Season with salt if needed. 

Check if the liver is fully cooked then remove the wok from the heat. 

Serve hot and enjoy!
