Bilo Bilo with Latik Recipe



Bilo Bilo with Latik is one of those easy to make Filipino kakanin. It is made with glutinous rice flour, coconut milk and brown sugar. Some like the Bilo Bilo flat like Palitaw but I like it round like a golf ball. See easy to follow recipe below.




For Bilo Bilo
  • 1 cup glutinous rice flour
  • 1/2 cup water
  1. Combine water and glutinous rice in a bowl. Mix well. Divide the dough mixture into 16 parts then mold then into ball shape. Set aside.


For Latik
  • 1 cup coconut milk
  1. Pour coconut milk into a sauce pan. Bring to a boil uncovered while stirring continuously. One it starts to boil reduce heat to low. Stir continuously until the curds turns brown and separate from the coconut oil. Drain and set aside.
For the Sauce
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 cup brown sugar
  • pinch of salt
  • 1/2 teaspoon vanilla extract (optional)

Instruction
  1. Combine water, coconut milk, pinch of salt and brown sugar. Mix well and bring to a quick boil. 
  2. Once sauce starts to boil drop the rice balls one by one.
  3. Reduce heat to medium low and simmer for 10 minutes or till rice balls are fully cooked.
  4. Stir gently every few minutes and simmer until sauce thickens.
  5. Sprinkle cooked Latik, stir and remove from heat. Serve hot and enjoy.

Note:
If sauce gets so thick just add a tablespoon or two of  water. Stir and simmer for few more minutes till sauce gets to the right texture.
