Sweet Mango Rice

Suman at Mangga or Sweet Mango Rice is made with glutinous rice, coconut milk, sugar and ripe sweet mangoes. Simple to make yet very satisfying.

  • 2 cups of sticky rice
  • 4 cups coconut milk
  • 2 cups water
  • 1 cup white sugar
  • 1/2 teaspoon salt
  • 1 teaspoon toasted sesame seeds
  • 6 ripe mango

1. Cook sticky rice in 2 cups of water, 2 cups coconut milk, 1/2 cup sugar and 1/4 teaspoon salt. Once it starts boiling remove cover, reduce heat to low and keep stirring to avoid the rice from sticking to the bottom of the pot. Continue cooking till rice is fully cooked and set aside.

2. Using a sauce pan, mix the remaining coconut milk, sugar and a dash of salt. Simmer over medium low heat, stirring frequently for 5 minutes or till the sauce thickens.

3. Place cooked sticky rice in a serving dish. Add mango slices and drizzle with coconut sauce. Sprinkle some toasted sesame seeds.

Serve warm and enjoy!

Serves 4-6
