Pop Corn Chicken Recipe





Pop Corn Chicken is one of my kids favorite to munch. It is not only good as appetizer, my kids likes to eat it with rice dipped in sweet and sour sauce. 

This recipe below is not only easy to make but also full of flavor. Chicken is marinated overnight with some spices, coated and deep fried till crispy. There are many ways on how to make Pop Corn Chicken but here is an easy version and kid friendly.




Ingredients
  • 2 lbs. skinless and boneless chicken thighs
  • 2 cups peanut oil or any kind

Marinade
  • 3/4 tsp. 5-spice powder
  • 1 to 2 tsp. garlic powder or 4 cloves of garlic, minced fine
  • 1/2 tsp. ginger, minced fine (optional)
  • 1/2 tsp. ground white pepper
  • 1 tsp. salt
  • 1 cup all purpose flour


Coating
  • 1 egg
  • 1/2 cold water
  • 1 cup all purpose flour
  • 1/2 cup cornstarch

nstructions

  1. Rinse, drain and cut chicken into bite size. Set aside.
  2. Using a large Ziploc bag or a deep container combine flour, 5-spice powder, garlic, ginger, salt and ground pepper.
  3. Add chicken to the above marinade mix. Mix to coat all the chicken and cover container. Refrigerate for at least 2 hours or better overnight.
  4. Place egg in a bowl with the 1/2 cup of water. Beat together with a fork. Set aside.
  5. Combine 1/2 cup cornstarch and 1 cup flour in a bowl. Set aside.
  6. Heat frying pan in medium heat and add cooking oil.
  7. Dip the chicken first in the watery egg mixture then in the flour and cornstarch mixture.
  8. Deep fry chicken in batches for 4-5 minutes or until golden brown and fully cooked. Try not to overcrowd the pan so the chicken will cook evenly.
  9. Place fried chicken on a wire rack or a plate lined with paper towels to drain excess cooking oil. Serve hot with sweet and sour sauce or any dipping sauce prefer on the side. Enjoy.
