Pinangat

Pinangat na Isda or Pangat is one of Filipinos favorite fish dish where fish is stewed and simmered in sour broth with ginger, garlic and tomatoes. Some like it with other vegetables like eggplant or bitter melon or both.

Ingredients
  • 2 large Tilapia about 2 lbs
  • 1/2 teaspoon ground pepper
  • salt to taste
  • 2 knob ginger
  • 5 cloves garlic
  • 2 large tomato
  • 1 cup water
  • 1 tablespoon soy sauce
  • 1/2 cup vinegar
  • 1 teaspoon sugar as needed
  • 2 tablespoon oil
  • green onions
Instructions
  1. Arrange fish in a pan. Season ground pepper and salt. Add ginger, garlic and tomatoes. 
  2. Add water, soy sauce and vinegar, and bring into a quick boil for about 5 minutes.
  3. Cover pan and continue to simmer over medium heat for about 20 minutes. 
  4. Add sugar to taste and more salt or fish sauce as needed. Cook for few minutes.
  5. Add cooking oil and top with green onions. Cover and cook for a minute. 
  6. Remove pan from heat and serve hot with rice. Enjoy!
