Chicken Liver Afritada

   
Sharing my favorite Chicken Liver dish recipe. This Chicken Liver Afritada is similar to Chicken or Pork Afritada but instead Chicken Liver is used. An easy recipe for chicken liver lover.  


Ingredients:
  • 3 tbsp cooking oil
  • 1 medium onion
  • 4 cloves of garlic
  • 1 medium carrot
  • 1 medium potato
  • 1 medium red bell pepper
  • 1/2 cup green peas or guisantes
  • 1 lb chicken liver
  • salt and ground pepper to taste
  • 1/2 cup tomato sauce
  • 1 tbsp soy sauce
  • 1 tsp brown sugar or to taste
  • 1/2 cup water

Instructions:
  1. Heat oil over medium heat. Add potatoes and carrots to the pan and cook for about 5 minutes. Remove and set aside. 
  2. In the same pan, saute onions and garlic for about a minute. Add chicken liver and gently stir. Cook until seared. 
  3. Add water and tomato sauce. Gently stir and let it simmer for few minutes. Add soy sauce, brown sugar, salt and ground pepper to taste. Gently stir and cover pan. Simmer for about 10 minutes or until liver is fully cooked. 
  4. Add green peas and bell peppers. Add more salt and ground pepper as needed. Gently stir and continue to simmer until vegetables are cooked. Set hot over rice.
