 Ginataang Tilapia Recipe


Looking for an easy yet super tasty Tilapia cooked in coconut milk recipe? This Ginataang Tilapia recipe is not your simple Tilapia recipe cooked in coconut milk. Tilapia is stuffed in tomatoes, onions, garlic and ginger, slow simmered in coconut milk until sauce thickens. 

 

Ingredients:

  • 2 medium size tilapia
  • 1 thumb size ginger, minced
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 2 large tomato, chopped 
  • 1 tbsp fish sauce
  • 1/4 cup vinegar
  • 1 1/2 cup coconut milk
  • 1/2 tsp brown sugar (optional)
  • salt and ground pepper to taste
  • 2 banana peppers
  • banana leaves

 
Instructions:

  1. In a bowl, combine ginger, onion, garlic and tomatoes. Season with fish sauce and ground pepper. Stir until well combined. 
  2. Butterfly cut clean tilapia. Stuff well with tomato mixtures. 
  3. Arrange banana leaves in a wide pan. Place stuffed tilapia and add vinegar. Uncovered, bring into a quick boil for about 5 minutes. 
  4. Add coconut milk and bring into a quick boil. Add sugar, salt and pepper to taste. Gently stir and cover pan. Simmer over medium low heat and allow to cook for about 20 minutes or until the stuffed tilapia is fully cooked and sauce starts to thickens while gently stirring the sauce every 5 minutes. 
  5. Top with banana peppers, cook for few minutes and serve hot with steamed rice.
