Jollibee in Anaheim

Finally after a long wait...... (updated)

The famous Jollibee Restaurant now open in Anaheim, California. It opened yesterday, October 1st and I was there to witness the excitement of every Filipino waiting in the long line. They are not ready to serve breakfast but I did not hear anyone complaint. What is so great about this branch is they have a Drive Thru Window. How convenient could that be.

Next door is the Red Ribbon Bakery which also open the same day. I purchased mamon , sponge cake and mango bars. I was told by one of the Jollibee employee Chowking will open next year around April. Isn't that great! Specially it is so close to home.

Chicken Sopas Recipe

A Healthier Version

100 grams Elbow Macaroni, boiled al dente
2 cups shredded chicken breast (set aside excess chicken broth)
1/2 cup diced carrot
1/2 cup diced red bell pepper
1/2 cup diced celery
2 cups cabbage, sliced thin
1 small onion, minced
5 pieces garlic cloves, minced
2 pieces Knorr chicken cubes
2 tablespoon olive oil
1 cup evaporated milk
10 cups water
salt and ground black pepper to taste
Cooking Direction:
Saute garlic and onions till caramelized in olive oil.
Add carrots, bell pepper, celery, chicken stock cubes and chicken breast.
Add water and bring to boil. Season with salt and ground pepper.
Add elbow macaroni. Bring to boil for few minutes.
Add evaporated milk and simmer for few minutes.
Add cut cabbages. Remove from heat and serve hot.

Laswa Ilonggo

A healthy dish I truly miss being away from the Philippines. Simple and healthy yet very tasty using tiny shrimp called ipon or hipon in Ilonggo with mixture of green papaya, okra, sitaw, malunggay, kalabasa and saluyot all fresh from the local market seasoned with just salt.

Teriyaki Sesame Chicken Wings Recipe

Chicken Wings Ingredients:
3 lbs chicken wings
1 cup flour
1 tbsp garlic powder
1/2 tspn ground black pepper
2 cups cooking oil

Teriyaki Sauce Ingredients:
1/4 cup soy sauce
1/4 cup water
1/2 cup mirin sauce
2 tablespoon cooking wine
2 tablespoon brown sugar
3 pcs garlic cloves, minced
1 thumb size ginger, minced
dash of black pepper
1 teaspoon cornstarch (optional/diluted in 2 tablespoon water)
Cooking Direction:
Teriyaki Sauce: Using a sauce pan mix all the teriyaki sauce ingredients (not including the cornstarch) and simmer in low heat till thickens. Taste test the sauce for desired sweet salty taste. Remember, you can always add or reduce sugar for desired taste. Once the sauce thicken add the cornstarch. Stir quick and remove from heat. Strain sauce to discard garlic and ginger pieces and set aside.
Sesame Seeds: 1 teaspoon, brown and set aside.
Chicken Wings: Place chicken in a large Ziploc bag. Season with garlic powder and ground pepper. Pour in flour and shake well. Set aside.
Heat cooking pan in medium high heat. Pour in cooking oil. Once cooking oil is ready start deep frying chicken one by one till fully cooked and crispy. Set aside.

Arrange chicken wings in a serving dish. Top with teriyaki sauce and sprinkle sesame seeds and serve.

Adobong Pusit Recipe

2 lb small size Squid, cleaned
6 pieces garlic cloves, minced
4 pieces bay leaves
1/2 cup datu puti vinegar
2 tablespoon soy sauce
pinch of ground pepper, sugar and salt to taste
2 tablespoon cooking oil

Cooking Direction:
Using a wok arrange the cleaned squid. Top with garlic, ground pepper, soy sauce, vinegar and bay leaves. Bring to boil. Once it starts boiling reduce heat to low. Season with sugar, salt and cooking oil. Adjust heat to medium low. Simmer for 5 to 10 minutes or till sauce thickens and serve.

Pork Adobo Recipe

A Super Tasty Moist Adobo Recipe
2 lbs pork butt, slice into bite size
1 cups vinegar
1 cups water
1/4 cup soy sauce
6 pieces garlic cloves, crushed
1/2 teaspoon whole pepper corn
4 pieces bay leaves
2 tablespoon sugar (optional)
salt and ground pepper to taste (optional)
Cooking Direction:
Using a wok place slices of pork, water, crushed garlic, whole peppercorn and bay leaves. Bring to boil in medium high heat till pork is almost tender. Add soy sauce and vinegar. Once it starts boiling add sugar, salt and ground pepper.
Simmer in medium heat till meat is fully tender and sauce thickens. Now the adobo is ready to serve. Enjoy!

Leche Flan Recipe

Here is a simple recipe on how to make a delicious Filipino Leche Flan. Give this a try. I guarantee you, your family and friends will love it. Enjoy!

1 dozen egg yolks
1 can evaporated milk
1 can condensed milk
1 tbsp vanilla extract

For the caramel:Mix 4 tbsp white sugar and 3 tbsp water. Bring to a boil for few minutes. Remove from heat and pour on a (1 pc) bundt cake molder or (2 pcs) oval aluminum molder. Allow it to cool for few minutes.

For the Flan:
Mix the egg yolks, evaporated milk, condensed milk and vanilla extract in a mixing bowl. Gently pour the mixture in the caramelized mold.

Cooking Procedure:
Cover molder with a piece of aluminum foil. Steam for about 30-40 minutes.
Allow it to cool and refrigerate overnight before serving.

* When serving run a thin spatula around the flan or knife to loosen the edges. Place serving dish on top of the molder. Holding it tight, quickly turn it upside down to show the caramel sugar.


Pork Embutido Recipe

Embutido is a Filipino style meat loaf that is usually serve during special occasion. Try this simple and easy to prepare recipe. Just mix, roll, steam and serve.

3 lbs ground pork
2 cup chopped ham
1 cup diced red bell pepper
1/2 cup shredded carrots
1 cup raisins
1 cup relish
1 cup grated cheddar cheese
6 pieces egg
salt and ground pepper to taste
Cooking Direction:
Mix all above ingredients. Refrigerate for an hour to chill.
Divide mixture into 6 portions.
Place a portion at the center of each foil.
Roll the aluminum foil tightly sealing both ends.
Repeat with the remaining pork mixture.
Place the embutido in a steamer and steam for about 90 minutes.
Remove from the steamer. Let it cool and slice into serving size.
Serve with your favorite dipping sauce like catsup or sweet and sour sauce.

Atchara Recipe

Also known as "Pickled Papaya or Achara". Great as a side dish for grilled meat or fish.

Ingredients:2 medium size green papaya, shredded
1 large piece bitter melon, julienned (optional)
1 piece red bell pepper, julienne
1 pieces thumb size ginger, julienne
1 medium size onion, sliced
6 pieces garlic cloves, sliced thin
1/2 cup raisins
1 tablespoon whole peppercorn
1/8 teaspoon turmeric
3 cups datu puti vinegar
4 tablespoon white sugar
4 tablespoon brown sugar
1 teaspoon rock salt

How to:
Step 1: Mix vinegar and regular and brown sugar in a sauce pan. Taste for desired sweet and sour taste. Bring to a quick boil. Remove from heat, add the turmeric for a little color and set aside.
Step 2: Sprinkle shredded papaya with a teaspoon of rock salt and toss well. After few minutes pour 1 cup of water and squeeze out the juices from the papaya using a cheese cloth. Set aside.
Step 3: In a deep bowl mix pepper corn, raisins, bell pepper, ginger, onion, garlic, bitter melon, papaya and toss well.
Lastly: Pour the vinegar mixture over the vegetables. Toss well. Let it stand at least overnight in the fridge before serving.
