This Pork Hamonado is made using pork tenderloin sliced thinly and filled with pineapple, sweet pickles and carrots slow simmered to perfection. It has a perfect balance of sweet, salty and savory flavor. A great pork dish for parties or any family gathering. This Pork Hamonado dish reminds me of town fiesta back home in Iloilo City.

Ingredients:

3 lbs pork loin (fillet, slightly pounded)

For Marinade:
2 cups pineapple juice
2 teaspoon salt
1 cup brown sugar
pinch of ground pepper



For Filling:

5 pieces whole sweet pickles, sliced
1 carrot, sliced
1 can sliced pineapple, 4 pieces cut into chunks
(the remaining pineapple save for garnish)



Cooking Instructions:
  1. In a bowl, combine marinade ingredients. Add pork to the marinade sauce and allow to marinate for at least 20 minutes to overnight. 
  2. Spread the fillet pork and top with the fillings. Tie using a string. (I used thread) Wrapped around the meat.
  3. Place stuffed pork loin in a wide pan including the marinade. Cover pan and bring into a quick boil. Reduce heat to simmer over medium-low heat. Allow to cook until sauce is thickened and caramelized while turning and rolling over the sauce, and meat is fully cooked.
  4. Transfer in a serving plate and allow to cool for at least 5 minutes before removing the strings and slicing. Garnish with sliced pineapple and pour the remaining sauce on top and serve. Enjoy!
