Bangus at Talbos ng Kamote


Sinabawang Bangus with Talbos ng Dahon Kamote is a simple Filipino dish that is not only easy to make but also healthy. You can add other vegetables to this recipe such as okra, ampalaya, etc.

See easy recipe below and give it a try. You can use boneless bangus in this recipe and use sinigang sampalok powder instead of tomatoes or use both.



Ingredients:
  • 2 lbs bangus, cleaned and cut into serving size
  • 2 bunches kamote leaves (sweet potato leaves)
  • 2 medium eggplant, cut into bite size
  • 1 large onion, sliced
  • 2 thumb size ginger, sliced
  • 3 medium tomatoes, sliced
  • 3 finger chilies
  • 1 tsp ground black pepper
  • salt to taste
  • 4 cups of water



Instructions:
  1. Using a deep pot bring water into a quick boil. 
  2. Add onions, ginger and tomatoes. Season with ground pepper and salt to taste. Cover and simmer for 5 minutes while stirring occasionally. 
  3. Add fish and continue to simmer for 10 minutes. Skim off scum on the surface as needed. 
  4. Add eggplant and finger chilies. Cover and continue to simmer until soft for about 3 minutes. Taste test if more salt or ground pepper is needed. 
  5. Add kamote leaves and simmer for few more minutes. Remove pot from heat and serve fish soup while hot with steamed rice. Enjoy!
