Bulanglang na Gulay Recipe


Bulanglang is a healthy and nutritious soup dish that contains different type of vegetables. It is a soupy kind of vegetable dish so delicious and best served with hot steamed rice.

There are many version on how to cook Bulanglang and this recipe is the simpler one as Bulanglang is usually cooked or stewed with bagoong but not this recipe. Salt or fish sauce can also be used instead of bagoong.

Ingredients
  • 1 tbsp canola oil
  • 1 large onion, sliced
  • 2 thumb size ginger, sliced
  • 2 medium tomato, quartered
  • 4-5 cups rice washing
  • 1 large ampalaya, sliced
  • 2 cups cubed kalabasa
  • 6-8 large okra, trimmed
  • 1 large eggplant, sliced
  • 1-2 cups saluyot (jute) leaves
  • 1 large (1-2 lbs) bangus, cleaned and sliced into serving pieces
  • fish sauce or salt (or fish bagoong) to taste

Instructions
  1. Heat deep pot or pan over medium heat and add oil. Saute onion and ginger until aromatic. Add tomato and stir to combine. Allow to cook for a minute. Pour-in rice washing and bring into a quick boil. 
  2. Reduce heat to simmer and add ampalaya, kalabasa, okra and eggplant. (Feel free to add more vegetable desired) Allow to cook for few minutes. Add slices of bangus and season with fish sauce or salt to taste. Continue to simmer until vegetable and fish are fully cooked. Remove any scum that floats. 
  3. Lastly, add saluyot or malunggay (or both) leaves. Allow to cook for a minute and transfer in a serving bowl. Serve hot with steamed rice and enjoy!
