Ingredients
  • 2 tablespoon cooking oil
  • 1 large onion, chopped
  • 6-8 cloves of garlic, chopped
  • 2 lbs chicken parts
  • 1 cup vinegar
  • 1/2 cup water 
  • 1/4 cup soy sauce
  • 3 pieces bay leaves
  • 1/2 teaspoon ground pepper or to taste
  • 1-2 tablespoon brown sugar or to taste
  • 1 tablespoon oyster sauce
  • salt as needed
  • 6-8 pieces finger chilies (optional)

Instructions
  1. Using a wide pan, heat and add cooking oil. Add onions and cook until soft for about a minute or less. Add garlic and allow to cook until fragrant for about a minute. Add chicken parts and stir to combine. Allow chicken to cook until lightly browned for about 5 minutes while stirring occasionally. 
  2. Add vinegar and bring into a quick boil without stirring. Add water, soy sauce, bay leaves, ground pepper and sugar. Bring into a quick boil and stir to combine. Add oyster sauce and stir well. Lower heat and simmer for 20-30 minutes until chicken are cooked through and sauce is reduced. Taste to see if salt and more sugar is needed. Adjust taste accordingly. 
  3. Add chili peppers and gently stir to combine. Allow to cook for few minutes. Remove pan from heat, transfer in a serving plate and serve with steamed rice. Enjoy!
